Easy Peasy Microwavy Carroty Cakey


1 1/4 c sugar
1 c cooking oil
1 t vanilla extract
3 eggs
1 1/2 c unsifted all purpose flour
3/4 t salt
1 1/2 t baking soda
2 1/2 t cinnamon
2 1/4 c grated carrots
1/2 chopped walnuts

Mix together the sugar, oil and vanilla in a large bowl until well blended.

Mix together flour, salt, baking soda and cinnamon in a small bowl until well mixed.

Slowly add the dry ingredients to the wet ingredients until flour mixture is well incorporated.

Fold in carrots and walnuts.

Pour into greased, MICROWAVE cake dish. Bundt pan shape is preferred, although a 12X8X2" or other dish may be used.

Microwave on high from 8 to 15 minutes. Rotate 1/2 way through if your microwave doesn't have a rotating center. Cake is done when a toothpick inserted comes out clean. Frost with cream cheese frosting or other frosting of your choice.
